Portabello have a long growing cycle which develops their meaty taste. Can be sliced, grilled, baked or stir fried. Remove fibrous stem. Portabello and Asparagus Salad Recipe: Combine 500g thinly sliced portabello mushrooms with 500g of sliced and trimmed blanched asparagus in a pan with 2 cloves of garlic, salt, pepper, flat parsley and a sprig of rosemary. Cook until tender, then drizzle with balsamic vinegar.
