Also known as Spanish Onions. Red onions are mild, moist, sweet flesh and burgundy-coloured skin. They perish faster than white or brown onions and lose their vibrant colour with prolonged cooking. They can be served raw in salads or sandwiches. Common Health and Nutritional Beliefs: A strong antioxidant with anticancer agents. Said to lower cholesterol, fight asthma, hay fever and diabetes. CARAMELISED ONION BACON AND POTATO SALAD RECIPE: Ingredients - 6 red onions sliced thinly, 2kg kipfler potatoes, 4 bacon rashes, 1/4 bunch of chives. Caramelise onions by heating in oil in a pan for 40min Cut potatoes into large chunks and boil till just tender. Cut bacon into pieces and cook till crisp- drain. Toss onion, potatoes, chives and bacon (reserving some). DRESSING: Mix 1 cup mayonnaise, 1 tbsp Dijon Mustard and juice of 1 lemon- whisk. Pour over salad & garnish with extra bacon & chives.
