Japanese pumpkins have a green and cream mottled skin and a rich orange flesh. The skin is softer and easier to cut than other varieties. Spiced Pumpkin and Zuccini Recipe: Peel 1/2 to 1 whole pumpkin, scoop out seeds and cut into cubes. Add to olive oil heated in a pan with a sprig of thyme. When slightly tender add sliced zuccini, 2 oz of pumpkin seeds, cinnamon and chopped corriander. Remove thyme before serving. Common Health and Nutritional Beliefs: Rich in beta carotene and high in antioxidants. May help ward off heart attacks, cancer and strokes.
