In ancient China, rhubarb was used for medicinal purposes, today it is commonly used as a dessert fruit. STEWED APPLE & RHUBARB:- Trim rhubarb bunch of stringy skin and cut into 5 cm pieces, Skin, remove core and slice 5 apples. Place in a pan with about 2 cups of water. Add a dessertspoon of honey and 4-5 cloves. Simmer until tender. Serve with ice cream or custard, or pour into a prepared pie base to make a rhubarb and apple pie. Rhubarb is best used when it is glossy, firm and crisp. Storage: Refrigerate. Common Health and Nutritional Beliefs: High in dietary fibre and vitamin C.
