Sweet Potato - Red/purple- Kumara
Red sweet potato is a root vegetable with a white or purple flesh. May be baked, boiled, mashed or fried. Adds colour and goodness to pie fillings and scones. Combines well with rosemary, shallots and cheese. Storage: Cool, dark location. Common Health and Nutritional Beliefs: Great source of antioxidants. Said to help ward off heart disease, strokes and cancers. Source of Vitamins C, E and A.
POTATO & CORIANDER SALAD: Slice 2kg of SWEET POTATO. Coat with olive oil salt and pepper. Bake until tender. Drain and place in a warm serving tray. To prepare dressing, add 2tbsp each of sunflower & pumpkin seeds and 1 tbsp each of poppy seeds and sesame seeds. Heat in oil until golden brown. Drain. Whisk briefly 4 tbsp of balsamic vinegar, two tbsp of mustard. Add 1/4 bunch chopped corriander. Whisk for 5 seconds. Pour over warmed pumpkin mix. Add seed mix. Toss & serve.
