Zucchini - Green
Zucchini are a long, thin vegetable with a firm glossy skin. Use unpeeled and cut into rounds, strips or halves. They can be eaten raw in salads, as a dip accompaniment or steamed or baked. Also delicious in stir-frys. Basil, butter, garlic, marjoram, onion, peppers and tomatoes are suitable seasonings. Herbed Tomato & Zuccini Recipe: Lightly fry 1 small chopped onion and 1 garlic clove. Add 1 chopped tomato, 2 finely sliced zuccini, and 1 cup of beans or snow peas. Stir to prevent burning. Add water as necessary. Add fresh herbs such as basil and marjoram. Common Health and Nutritional Beliefs: Said to be an excellent source of Vitamin C, but low in sodium.
