Caesar Salad

This is a classic salad and a great light meal for warmer days.

Method
Chop the eschallots. Boil the eggs in a small saucepan for around 4 to 5 minutes, so still a little soft in the centre, or to taste. Trim and dice the bacon rashers. Add the bacon and eschallots to a hot, oiled pan. Once the pan is flavoured, follow by adding the chicken strips, salt and pepper. Cook until browned. Crack and peel the eggs under cool running water. Slice each egg into four quarters.
Meanwhile, separate, wash and dry the Cos lettuce leaves. Wash and halve the tomatoes. Add all ingredients to a salad bowl and toss well. Add your favourite caesar dressing and toss again. Serve immediately.
