Serve these roasted vegetables with your favourite roast meat.


  • pumpkin
  • sweet potato
  • potatoes
  • carrots
  • parsnips
  • red onion
  • rosemary
  • garden thyme
  • salt
  • pepper
  • vegetable oil

Heat the oven to 180°C.  Chop all the vegetables into large serving size chunks. (Remember that your vegetables will always shrink during baking.) Season with salt and pepper. Sprinkle with rosemary and thyme leaves and toss in vegetable oil. Bake for around 40 minutes or until tender. The exact time will depend on the size of your vegetable pieces. Serve your roast vegetables hot with your desired meat.
