Love chives and avocado? Try this great refreshing chicken salad recipe.


  • 500g chicken strips
  • 150g sugar snap peas
  • 2 avocados
  • 2 cups snow pea sprouts
  • 2 cups baby spinach leaves
  • 4 tablespoons chives
  • 1/4 cup white/red wine vinegar
  • 1/4 cup olive oil
  • salt
  • pepper

To prepare the salad, pan-fry the sliced, seasoned chicken breast.  Alternately, 750g shelled medium prawns can be used. 

Steam the trimmed sugar snap peas.  Slice the avocados.  Rinse and drain the snow pea sprouts and baby spinach leaves. Place the salad ingredients in a bowl and toss to combine.

To prepare the chive vinaigrette, combine the chopped fresh chives, vinegar and olive oil. Mix well.

Add the warm chicken to the salad mix, drizzle with vinaigrette and toss well. Sprinkle with cracked pepper. Serve immediately.
