These capsicums work well as an entree, snack or vegetable side dish.


  • 4 capsicums
  • 2 stalks of eschallots
  • 1 red onion
  • 2 rashers of bacon
  • 1 cup rice
  • salt
  • pepper

Boil the rice until al dente. Shallow fry the diced bacon until crisp. Drain the rice. Allow ingredients to cool.  Chop the eschallots and dice the red onion. Combine all of the ingredients, adding salt and ground pepper to taste. Prepare the capsicum by cutting off the top and scraping out the seed core. Reserve the capsicum top. Fill the capsicum with the rice mixture. Serve garnished with the capsicum top.
