A delicious fresh snack or side salad.

Method
Slice off the tops of the tomatoes and scoop out the flesh. Reserve the tomato tops. Mash the avocados. Chop the eschallots and dill. Combine the avocado, eschallots and dill. Season with salt and pepper. If desired, add a splash of balsamic vinegar or a sprinkle of cheese. Spoon the avocado mixture into the tomato shell. To serve, garnish with the tomato tops and dill.
