Baked potatoes are deliciously creamy and a great as a side dish with steak and salad, or as a weekend lunch treat.

Ingredients

  • 4 potatoes
  • onion chives
  • eschallots
  • sour cream
  • pepper

Method

Pre-heat the oven to 200-220°C. Wash the potatoes and boil until slightly softened.  Put two cuts in the top of each potato, forming a cross.  Squeeze the potato gently so that it opens.  Bake the potatoes in the oven until tender.  Fill with sour cream, chopped eschallots and chives. Sprinkle with pepper and serve warm.
