Leeks are commonly used in soups, stews, quiches and risottos. Leeks are particularly delicious when braised or roasted. Trim the tops and store in a sealed plastic bag in the crisper. To use, trim away the roots and green top and remove the outer layer. Cut in half. Common Health and Nutritional Beliefs: Said to be rich in anticancer and antioxidant agents.
RECIPE: HERBED LEEKS:Top and tail 6 washed leeks. Place in a heavy pan, cover with i cup of water and add 1 tablespoon each of fresh tarragon, parsley, lemon juice. Add 1 crushed clove, 1 skinned chopped tomato, 1 bay leaf, 1/4 cup olive oil, salt & pepper to taste. Bring to the boil and simmer until tender.
