Mushrooms - Flats/Field (250g)
Flats tend to be a large, flat full flavoured mushroom that are great in a number of meaty dishes or in sauce for steak.
RECIPE: RISOTTO WITH GRILLED GARLIC MUSHROOMS : Saute 1 thinly sliced spanish onion and 1 clove chopped garlic in oil until softened. Add 1 1/2 cups Arborio rice and stir over heat for 2 minutes. Add 1 cup of boiling water with a vegetable stock cube and stir over heat until the rice absorbs the liquid. Add 1/2 cup semi-dried tomatoes and continue ladling 5 cups boiling water, stirring constantly, waiting until each ladle is absorbed before adding the next. Cook until rice is tender and all the liquid is absorbed. Meanwhile, place the 4 large flat mushrooms stem-side up on a baking tray, sprinkle with 2 extra sliced garlic cloves and leaves of 4 sprigs fresh thyme. Drizzle with 1 tbsp olive oil and grill for 5 minutes or until just soft. Serve risotto topped with a mushroom. Serves 4.
